Weekly Dinner Meal Plan: June 18 – 22
Father’s Day will be a day of indulgent and heavier foods my guys love. So Monday, we’re upping the veggies.

Plus, this coming week has varying schedules so I’m planning dinner ideas I can make ahead and have ready… whenever. Not traditional meal prep, just easy, healthy foods the family will love.
Especially the son who is a bit of a grilled cheese connoisseur. He’ll love Wednesday’s dinner!
The treat this week? We’re going healthy. But delicious! And very summery. Lots of strawberries… and protein.

After a day of indulgence on Father’s Day — I’m ready up our veggie intake. “This veggie-packed beauty is nice and filling, thanks to meaty eggplant. If you can’t find burrata, simply tear 6 ounces of fresh mozzarella into bite-size pieces.”

Tuesday: Crispy Salmon Burgers
I try to serve fish, particularly salmon, at least once a week. This week is busy and everyone’s on a different schedule. I will make up the patties and store in the refrigerator until one by one, they come through the door, hungry, and on their way to the next “thing.” Serve on a bun with coleslaw or a giant green salad. If you’re watching carbs, eliminate the bun.

Wednesday: Spanakopita Grilled Cheese
“It has all the cheesy, garlicky greens of a spanakopita, but between much more manageable slices of bread. And the even better news is you’re about 20 minutes (less if you really hustle) away from eating it.” No recipes tonight. Just pure yummy goodness.
