Easy Cleanup Dinners
Weekly Dinner Meal Plan: October 1-5
A 5 night, Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss.
Welcome to October! The days are growing brisker, the leaves are spectacular… and pumpkins are lining the grocery store walkways.
It’s my favorite time of the year.
And, perhaps, the busiest.
This week I’m serving easy cleanup dinners. Mostly one pot or one pan. But they are seasonal… and delicious.
It’s what for dinner this week!
Be sure to print your dinner planner at the bottom of this post.
Have a great week!

Monday: Sheet Pan Chicken Parmesan
“Combine the simplicity of a sheet pan dinner with the classic comfort of chicken Parmesan in this simple weeknight recipe. Clever use of aluminum to “wall” off certain ingredients helps you cook everything properly without dirtying multiple pots and pans.” Serve with a simple salad, mashed potatoes, noodles, rice — or your choice carb.

Tuesday: Steamed Salmon with Garlic, Herbs and Lemon
“It’s quite possibly the easiest way to cook salmon. 1: there’s basically no clean up due to the parchment paper… winning. 2: you don’t risk your kitchen smelling fishy because there’s no opportunity for the salmon to splatter all over your counter when you sear it. 3: it’s a one-pot dish and we all LOVE that.” Serve with cauliflower rice, or herbed brown rice and a salad.

Wednesday: Cheesy Tomato Chorizo Orzo Skillet
“The orzo cooks directly in the skillet and releases some of its starch as it simmers, making this dish creamy and risotto-like — without the time commitment. It’s simple and comforting, yet not at all heavy.”

Thursday: Silky Tomato Soup with White Beans and Garlic Oil
“Creamy, silky tomato soup is the ultimate comfort food. We’ve elevated the traditional soup with the addition of white cannellini beans and toasty garlic oil. You won’t miss any of the cream or calories from this dairy-free tomato soup as the texture is still silky from blending the tomato base.”
