Weekly Dinner Meal Plan: May 14 – 18:
Happy Mother’s Day! I hope you’ve had a memorable day with those you love.
But Monday is coming and the family will once again be hungry! Aren’t they always?? We’re making it easy with these healthy and seasonal dinner ideas.
I’m often asked by friends, family, and readers what I’m cooking for dinner this week. Weeknight meals in our house can be hectic, with everyone going in different directions. This week’s meals are beautiful, filled with color, and healthy ingredients. I know you’ll love them!

Before the weather turns too warm, I’m still savoring comfort food soups. And this is a favorite, packed with healthy veggies, topped with Parmesan and served with a loaf of crusty bread. Try putting a thick slice of hearty bread in the bottom of your bowl, top with soup and Parmesan. It’s so, so good!
Tuesday: Easy Takeout Style Beef and Broccoli
It’s takeout night… made at home. Simply and easily. This Beef and Broccoli uses ground beef and is incredibly simple. Serve with steamed rice. My choice is always a short grain basmatti brown rice. But substitute your favorite rice. If time is short, use brown minute rice. Trust me… it’s just as good!
Wednesday: Spinach Pesto Pasta with Shrimp
Pesto is a quick, super flavor boost to add to any pasta. The recipe includes a quick pesto, but if you have a favorite store brand, use that! A simple shrimp and asparagus pasta toss finishes dinner deliciously! Another one pot meal is so convenient for busy weeknight dinners.

Thursday: Honey Sriracha Grilled Chicken Thighs
Sriracha and honey combine for the perfect sweet and spicy sauce to coat grilled chicken thighs. Serve with green beans and a quick, skillet roasted potatoes.
Friday: Grilled Mexican Pizza
It’s Friday!! Can there be a better Friday night dinner than pizza? My friend, Kim, from Give it Some Thyme shared this recipe recently… and it looks divine. I can’t wait to try it! She says, “Grilled Mexican Pizza with Salsa Verde and Chorizo. Oozing Oaxaca cheese, queso fresco, fresh and sun-dried tomatoes, green onions, and leafy cilantro bring even more flavor to the party. After trying this you’ll see why the grill is a pizza’s best friend.”
