What to Cook (Jan 6-10): 5 Ingredient Dinners
This week’s dinner meal plan is all about 5 Ingredient Dinners that happen to be healthy, and delicious, and winter inspired.
With a snowstorm forecasted for my neck of the woods this week, I’m stocking up on essentials. And on dinner ingredients.
The holidays are becoming a distant memory, and as we ease into the middle of January, I’m relishing easy, healthy dinners.
And these dinners certainly qualify and are perfect for middle January. Delicious, healthy, simple ingredients that don’t sacrifice flavor or variety. Don’t you love recipes like that?
On the menu this week is a one-pot puttanesca, a meatball stew, roasted chicken breasts, fajitas… and a healthy shrimp and grits.
The weekend treat? It’s one of my favorites and is Pinterest popular too — 2 Minute Bread Pudding in a Mug.
It’s so good and so easy! I’ve had several college kids living in dorms email saying it is one of their favorites too.
5 Ingredient Dinners … it’s what’s on the menu.

What to Cook (Jan 13-17): 5 Ingredient Dinners
Combine 12 ounces linguine, 12 ounces halved cherry tomatoes, 1/2 cup pitted and halved Castelvetrano olives, 1/4 cup capers, 1/2 cup chopped fresh parsley, 2 tablespoons olive oil, 1 tablespoon kosher salt, 1/2 teaspoon freshly ground black pepper, and 4 1/2 cups water in a large straight-sided skillet. Bring to a boil over high heat. Boil mixture, stirring and turning the pasta with tongs to prevent sticking, until pasta is al dente and almost all the liquid has evaporated, 8 to 9 minutes. Top with more fresh parsley.
