Weeknight Dinner Plan: The summer sun is heating up and we’re making 15 Minute July Dinners all week. They’re healthy, simple, and will keep the kitchen cool!

Summer is in full swing as we transition from June to July and head into a long weekend. Be sure to check out our 4th of July recipes and ideas!

15 Minute July Dinners

It’s been hot in Seattle, at least for us, with temperatures in the high 90s. Cooking long meals in the kitchen doesn’t sound fun when the summer heat is streaming through the window.

We’re keeping it quick, easy, and healthy this week.

For Monday, we’re looking at a grilled teriyaki dinner served over steamed rice. I’m cooking that rice in the Instant Pot (in 4 minutes!). Add summer greens to round out dinner.

Tuesday’s dinner is super easy with a Mediterranean-inspired quesadilla. Add cooked chicken or pork for added protein and a green salad for extra veggies.

On Wednesday, we’re making a 15-minute bowl dinner that I’m already looking forward to.

And no one can complain about Thursday’s dinner as it’s completely customized for each person. We give you tons of ideas of flavor combinations so everyone is happy!

For Friday, we’re returning to the grill with delicious grilled sirloin kabobs. I’m adding grilled vegetables cooked in a foil packet for easy cleanup.

Not to forget the treat, we are turning on the oven for delicious Blueberry Scones — served with iced tea, outdoors. It’s summertime!
