When summer gets into full swing, it seems like dinners can be a bit challenging. Schedules change, days are long and fun and active.
Or, the summer heat is so intense that cooking doesn’t seem as inviting as it does during other seasons.
I’m hoping this menu gives you some ideas on what to cook this week. Simple dinners, big on flavor, and ready in 15 minutes (give or take a couple).
Plus, they’re healthy, family friendly, and simple.
Here’s this week’s menu.
15 Minute Summer Dinners
Monday’s dinner is a meatless, healthy bowl of southwestern flavors that makes for a simple meal to pull together in minutes.
I’m rather excited about Tuesday’s dinner. It’s a Jamie Oliver 15 minute dinner, bold with flavor, as his recipes are, and simple. Serve family style and gather everyone around the table. Make extra chicken for leftovers.
On Wednesday, we’re headed to the Mediterranean for a simple and summery Greek salad, packed with flavors we love. A reader on Pinterest suggested adding chicken to the salad for a well-rounded dinner. And that’s what I’ve done. Thank you for the suggestion!
Thursday night is grill night (and if you don’t have access to a grill, the oven works just fine too). It’s a mix and match dinner that will keep everyone happy.
On Friday, we’re making a 15 minute dinner that will have you thinking “takeout” at home.
The treat? You know there always is one. It’s all about summer, and quick and easy treats under 100 calories.

Monday: Black Bean-Quinoa Bowl
This black bean and quinoa bowl has many of the usual hallmarks of a taco salad, minus the fried bowl. We've loaded it up with pico de gallo, fresh cilantro and avocado plus an easy hummus dressing to drizzle on top.
Tuesday: Jamie Oliver's 15 Minute Chicken Fajitas
"These lovely fajitas are bursting with fun flavours. Smoky, juicy chicken and beautifully charred veg served with a wicked ancho chili salsa for a seriously delicious Mexican kick. Plus, my rice and crispy spiced refried beans, all wrapped up in a lovely soft tortilla. A great dish for family and friends to get stuck into." - Jamie Oliver
Cook extra chicken and save for Wednesday night's dinner.
Wednesday: Greek Orzo Salad with Leftover Chicken
Greek Orzo Salad is a delicious, colorful salad filled with Mediterranean ingredients like feta, olives, cucumber, and herbs, tossed in a delicious and easy vinaigrette. Add grilled chicken tenders or leftover chicken from Tuesday's dinner to round out the meal.

One of my favorite easiest and fastest ways to get dinner on the table in mere minutes is Foil Packet Fish Dinners. Mix and match the ingredients to please everyone at your table!
Friday: 15 Minute Mongolian Beef
