Foods to Eat on a Mediterranean Diet
As a reminder to those of us who love to eat healthfully and Mediterranean, fill up on these foods:
- Daily consumption of vegetables, fruits, whole grains, and healthy fats
- Weekly intake of fish, poultry, beans, and eggs
- Moderate portions of dairy products
- Limited intake of red meat

20 Minute Mediterranean Dinners
As we look toward the last full week of February, these dinners are perfect for wintry comfort with an eye toward spring.
On Monday, we’re making a cozy, 20-minute “Spicy” white bean stew. That can, of course, be as spicy or as mild as you choose. Packed with healthy veggies and protein, it’s a perfect start to the week.
Tuesday’s dinner is packed with flavor, is fun, and super delicious with a Pineapple Salsa. I’m thinking about all things tropical today and just might also make a Coconut Pineapple Smoothie to get myself in the mood!
For Wednesday, we’re heading to Sicily for a Greek chicken skillet dinner we’ll serve over pasta. Whole wheat or chickpea pasta is the healthiest but choose your favorite. A green salad would be perfect with this easy chicken dinner.
On Thursday, we’re baking a quick and easy Mediterranean fish with wilted greens. Simple and utterly delicious.
On Fridays, I love to serve fun food. To me, fun Friday food puts an exclamation on the week and celebrates the coming weekend. The Greek Chicken Wrap planned for Friday is all of that — and quick and easy too. Add greens for a speedy and fun Friday dinner.
And since we’re still wintering here in the PNW, I continue to love comfort food desserts. These baked donut holes are healthier than the donut shop down the street — but super yummy too.

Monday: Spicy White Bean Soup with Kale
This White Bean Stew with Kale is a spicy and hearty bowl of healthy, creamy comfort food, ready in about 20 minutes. With a vibrant blend of herbs and spices, much like Harissa, often found in Tunisian cuisine.
Tuesday: Salmon Tacos with Pineapple Salsa
"An easy-to-make slaw served on the side of these salmon tacos makes for a filling and fast weeknight dinner. If you prefer more heat in these fish tacos, simply add a pinch or two of chipotle chile powder or cayenne with the chili powder."
Wednesday: Sicilian Olive Chicken
