One of the beautiful parts of September is that we find ourselves somewhere between late summer and fall. The best weather, the leaves beginning to change, cool mornings, and still an abundant of fresh local harvest vegetables.

The eating is good!

It’s also a time when hurry-up dinners become more normal. And so… healthy 30-minute dinners to the rescue!

Healthy 30 Minute Dinners for September: What’s on the Menu

I’m excited about this week’s healthy 30 minute dinners! Tons of flavor, healthy and easy too. It doesn’t get better than this!

Monday’s dinner is a vegetarian dream that’s packed with vegetables and flavor — all in 30 minutes. Think, take out at home!

For Tuesday we’re looking at a simple chicken dish I often order at my favorite Mexican restaurant. This is quick, simple, and healthy!

On Wednesday, it’s all about soup. I’m ready for warmer flavors, are you? Add crusty bread and a green salad to round out the meal.

Thursday’s seafood dinner is also quick, easy and fresh. If you’re not a fan of cod, substitute your favorite white fish.

And Friday is a healthier version of a favorite restaurant dish — Chicken Parmesan.
