Passover Begins Monday

April Mediterranean Dinners Menu
Monday’s dinner celebrates Passover with my favorite matzo ball soup recipe. It’s a filling meal packed with flavor and a delicious way to celebrate the holiday. Serve with matzo and a big salad!
Tuesday’s dinner is a quick and easy one-pot Mediterranean meal that you can swap with your favorite vegetables, like zucchini or mushrooms. It’s a vegetarian meal, but if you want to add protein like chicken or ground meat, that’s a great option, too!
Wednesday’s dinner may be new to you, but it’s a delicious Middle Eastern dish made with Indian spices, lentils, and bright, fresh herbs. If you want to add additional protein, fish would be a great option!
Thursday’s dinner is a simple but beautiful and delightful seafood dinner. It is all made in one packet and ready in minutes. Add a large spring salad filled with multiple greens.
Friday’s dinner is a bit of a celebration as we’re roasting a whole chicken one one pot, with spring orzo. If you want to cut the cooking time, substitute the whole chicken for chicken breasts, thighs, or a cut-up chicken. Just cook until the orzo is soft, and the internal chicken temperature reaches 165 degrees F.
The Treat is a kosher treat that always reminds me of spring… with a bit of decadence!

One-Pot Pasta With Spinach & Tomatoes
This speedy recipe is also endlessly adaptable, and lends itself to plenty of easy ingredient swaps... Change up the spinach for any vegetables you have on hand such as sliced zucchini and mushrooms. We've happily embraced whole-wheat spaghetti as a healthier alternative to white pasta; it works especially well in this one-pot application.
Wednesday: Middle Eastern Mujadara
