Weeknight Dinner Meal Plan: March One Pot Dinners. These healthy weeknight dinners are easy, one-pot meals packed with vegetables and lean protein. And definitely have an early spring vibe. It’s going to be a delicious week!
I love one-pot dinners week. Much like the comfort of bowl food, one-pot meals combine beautiful flavors and ingredients that simmer together… and make magic.
They also make for easy cleanup.
And while spring cleaning is definitely on my mind this week, keeping dinner cleanup easy will help in a week packed with to-dos.
March One-Pot Dinners
Monday is a beautiful and super fast pasta primavera. It’s loaded with spring-type vegetables, pasta, and shrimp. I’ll serve with additional greens.
For Tuesday, we’re making roasted chicken hindquarters. I love this recipe and always receive kind emails about it.
It’s a simple dish with budget-friendly cuts of chicken. Layer favorite vegetables around the pan, and dinner is delicious and easy. Be sure to cook additional chicken that night as you will need it for Wednesday night’s dinner.
Chicken Tamale Casserole is an easy favorite at my house. It’s a deconstructed, simplified tamale that’s a cinch to make. I hope you love it on Wednesday as much as we do.
On Thursday we’re cooking halibut stuffed with kale and a Feta pesto. The flavors are amazing, but the recipe is very simple.
Finally, we making fun on Friday night with an easy Cast Iron Skillet Pizza. I’m adding sausage and kale to ours, but add your favorite toppings.
