Easy Shrimp Scampi with Garlic and Lemon is one of the quickest dinners you can make. Not to mention, incredibly delicious.

Quick? Yes. In about 12 minutes, less if your pasta is already cooked.

An absolutely fresh, savory and special meal can be on the table. Add a slice of French bread, a green salad, and dinner is done.

Shrimp is something I often crave. But when you add some pasta, herbs, and a bit of butter, it might be one of my favorite meals.

And easy? Oh, my goodness. The shrimp scampi sauce takes 6 to 7 minutes. The linguini, about 11 minutes. Perfectly simple and delicious for weeknight meals, dinner guests, or any special evening.

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 4 garlic cloves, finely chopped
  • 1/2 cup dry white wine
  • Kosher salt and freshly ground black pepper
  • pinch of red pepper flakes
  • 2 pounds large shrimp, cleaned, de-veined and shelled
  • 1/3 cup chopped parsley
  • juice of 1 lemon
  • 1 pound linguine, cooked according to the package directions

Instructions

Cook the linguini according to package instructions.

In a large skillet, melt the butter and olive oil. Then add the chopped garlic and sauté about 1 minute. Add the wine, red pepper flakes and salt and pepper to taste. Bring to a simmer and continue cooking about 2 minutes or until the sauce has reduced.

Add the shrimp and sauté until they begin to turn pink, about 4 minutes, depending on how large they are. Stir in the parsley and lemon juice. Finally, add the cooked pasta, toss and serve.
