Here’s what we’re cooking this week.
Fall 400 Calorie Dinners
We’re beginning the week with a simple, go-to stir fry dinner I love to add to meal rotations. Super adaptable and easy. In fact, if you have a package of frozen stir-fry veggies… use it! I’m making ours with thinly sliced flank steak, but swap in chicken, pork, or even tofu. Serve over your favorite grain.
On Tuesday, we’re bringing in the fall flavors with a simple Italian Wedding Soup, packed with veggies and easy to make.
Wednesday’s dinner is one to look forward to. It’s a simple skillet chicken cutlets in a delicious, but healthy at 400 calories, cream sauce.
Thursday is a seafood grain bowl using farro, one of my favorite but underutilized grains.
On Friday, it’s a chili night with yet another healthy grain, quinoa. Super simple prep that lets the slow cooker do the dinner work for you.
And finally, a healthier peanut butter, chocolate chip muffin, perfect for breakfast, snacks… or lunches throughout the week.
