Healthy Dump Dinners
These load-and-go, healthy dump dinners are an easy solution to weeknight dinners. We’re adding ingredients to delicious dinners that require no meal prep, sauteing, or pre-cooking.
It’s going to be a delicious week!
Monday night is a vegetarian Instant Pot White Bean Soup that’s literally 5 minutes in the making. The ingredients are either frozen or canned. Add protein if you wish.
Tuesday is a Mexican favorite, simplified on a sheet pan. These Chicken Fajitas are simple, healthy, and delicious.
For mid-week, we’ll break out the slow cooker and make a dump and go classic of Italian Shredded Pork Stew. Thursday is another sheet pan favorite of roasted salmon and asparagus with a lemon-garlic butter. If you can’t find asparagus, broccoli is a good substitute.
And finally, Friday. In my book, Friday’s need to be fun dinners to celebrate the end of the week. This hearty, cold-weather classic is a simple meal that checks all of those boxes. This cornbread topped chili casserole will warm everyone’s toes!
