As you know, the 4th of July is on Monday. While most of us have our own 4th food traditions (BBQ chicken, ribs, hot dogs, burgers…), you get the idea, I’ve included a post with festive and fun new recipe ideas you may want to add to your menu.

The rest of the week are dinners packed with summer flavors and ingredients but are also simple and easy to make.

It’s summer, and simple and easy is what it’s all about! At least when it comes to weeknight dinners.

July Feels Like Summer Dinners

With a 3-day weekend ahead for most of us, and 4th of July parties to host or attend, it will be a busy few days.

Even if you’re not hosting or attending any gatherings, July brings summer eating to the front of our minds. Simple, delicious, and healthy foods that are a breeze to make.

On Monday, I’ve included a link to 4th of July recipes you may want to add to your menu.

For Tuesday, we’re looking at a simple, one-pot pasta salad recipe with chicken. If you’re grilling or making chicken on Monday, save some leftovers for this easy and simple dish.

On Wednesday, we’re dusting off the skillet for a simple one-pot dinner packed with summer vegetables. Keep that skillet handy for the treat this week too!

Thursday’s dinner is a healthy couscous salad, inspired by the Mediterranean Diet.

As we wrap up the week, Friday’s dinner is all about the grill (you can grill indoors too) and simple vegetables. Serve with your favorite grain.

Have a wonderful, fun, and safe week!
