This week we’re making dinners that remind us of the best of summer. Most especially, late summer.
I love late summer flavors. The garden is producing tomatoes and zucchini, squashes, and peppers. And the herbs are still abundant.
The fragrance of late summer, for me, is easy, healthy dinners featuring fresh vegetables, herbs and made with easy preparation.
So that there’s time to watch spectacular sunsets, linger at the lake or beach, breathe in the last of summer’s heat.
And then… begin to look forward to fall. My most favorite time of the year.
Late Summer Dinners
These simple late summer dinners feature in-season vegetables, whether you harvest from your own garden, or procure at your market.
Look for fresh, ripe fruit and vegetables… and add them to dinners where ever you can. Salads and greens are an easy way to add more veggies to the diet.
Don’t forget the summer berries, like blackberries! Perfect in salads, dessert crisps, over yogurt… or simply pop them in your mouth for a refreshing snack.

Monday: Classic French Provencal Ratatouille
A Classic French Provencal Ratatouille is a hallmark of summer. Filled with late summer veggies and fragrant herbs. An easy oven-baked dish, versatile and even freezer friendly. Add chicken or ground turkey if you'd like to beef up the protein and serve over rice or pasta, if needed, to satisfy.
Tuesday: Halloumi Tacos with Pineapple Salsa & Aji Verde
"These vegetarian tacos feature fried halloumi cheese (more on that in a minute), fresh pineapple salsa and aji verde (Peruvian green hot sauce). It’s a cultural mishmash of components, but the end result was meant to be. Maybe we can call them Mexican(ish)." Perfect for Taco Tuesday!
Wednesday: Grilled Chicken Kabobs with Cucumber Yogurt Sauce
