Light and Easy Dinners: (Dec 2-6)
The week following Thanksgiving deserves light and easy dinners, heavy on vegetables and healthy, easy on time.
I hope you had a fantastic Thanksgiving, spending time with family and friends. And eating incredible food!
Following this incredible feast, I’m looking forward to a week of healthy, lighter meals.
This is what I’m fixing for dinner this week: a healthy bean soup, a classic skillet chicken breast, a simple pasta with sweet potatoes, mini turkey meatloaves and a salmon burger.
The treat is one of my favorite seasonal mug cakes. I just might have to make it more than once!

A week of light and easy dinners for healthy weeknight meals. Packed with vegetables, these dinners are perfect for simple, easy fix meals.
Monday: Classic Ribollita Tuscan Bean Soup
After the feasting of last week, I'm packing in the veggies with this delicious but simple Tuscan Bean Soup. Serve with crusty bread if desired!
Tuesday: Chicken Breasts with Brown Butter-Garlic Tomato Sauce
"Browned butter is the quick cook’s best-kept secret: Less than two minutes in the pan caramelizes the milk solids in butter for a fragrant, nutty note in any dish. Try not to chop the tomatoes too finely; you want them somewhat chunky so they’ll break down in the sauce faster, but you also want them to retain some shape. If your chicken breasts are larger than 6 ounces (some can be as big as 12 ounces), halve the two breasts horizontally instead of pounding them thin. Serve over a bed of whole-wheat couscous, whole-grain polenta, or brown rice."
Wednesday: Bucatini with Winter Pesto and Sweet Potatoes
A simple weeknight pasta, healthy and simple, and ready in under 30 minutes. A standby all winter along.
Thursday: Muffin Tin Mini Turkey Meatloaves
One of my favorite comfort food recipes is these mini turkey meatloaves. I always make extra to freeze for quick meals. Serve with fresh green beans and cherry tomatoes.
Friday: Crispy Salmon Burgers in 15 Minutes or Less
A quick Friday dinner before heading out to holiday festivities, football or basketball games. Or... a relaxing night at home! Made with canned salmon, it is deliciously easy!
Treat: 2 Minute Gingerbread Cake in a Mug
It's the holiday season and I'm baking Christmas treats all weekend long. This quick and easy 2 minute cake in a mug is perfect!
