Tuesday's dinner is a fusion of Mexican flavors and the Mediterranean Diet. Isn’t it delightful when Taco Tuesdays become even healthier? No skipping this week as stay within the Mediterranean Diet philosophy of plant-forward, nourishing foods!

Wednesday's dinner is like springtime on a plate-lemon chicken with asparagus on the side- ready in 30 minutes. Add a salad, and this elegant meal is perfect for a simple but delicious mid-week meal.

Thursday's dinner features a vegetarian dish of baked sweet potatoes topped with roasted chickpeas, a simple garlic-herb sauce, and a parsley-tomato salad. Delicious, fresh, healthy, and naturally vegan and gluten-free.

Friday's dinner is a bold Mediterranean Diet seafood dinner (in case you’re observing Lent and eating fish on Friday). It features delicious flavors and colorful veggies and is seared to perfection in about 15 minutes. Serve as is or with your favorite grain or couscous.
