What Sheet Pan is Best?
I prefer using an 18×13-inch rimmed baking sheet for most sheet pan dinners. The size is ample enough to spread the ingredients around without crowding. A jelly roll pan (which is smaller, about 15×10) can work too.
Tips for Sheet Pan Meals
- Line the pan: For easy clean-up and no scrubbing, be sure to line your baking pan with foil or parchment.
- Prep ingredients ahead: For quick weeknight meals, prep as many of the ingredients ahead as possible. Store in an airtight container in the fridge for up to a day ahead. Marinate meat if needed, and chop the vegetables.
- Toss ingredients in oil: This is especially important when roasting vegetables so they don’t dry out in the oven.

Tuesday’s dinner is Mardi Gras — and we’re making a healthier version of Jambalaya. While this recipe bakes on a sheet pan, you can make Instant Pot Jambalaya or this simple one pot jambalaya recipe.
