What Sheet Pan is Best?

I prefer using an 18×13-inch rimmed baking sheet for most sheet pan dinners. The size is ample enough to spread the ingredients around without crowding. A jelly roll pan (which is smaller, about 15×10) can work too.

Tips for Sheet Pan Meals

  • Line the pan: For easy clean-up and no scrubbing, be sure to line your baking pan with foil or parchment.
  • Prep ingredients ahead: For quick weeknight meals, prep as many of the ingredients ahead as possible. Store in an airtight container in the fridge for up to a day ahead. Marinate meat if needed, and chop the vegetables.
  • Toss ingredients in oil: This is especially important when roasting vegetables so they don’t dry out in the oven.

Why Spring Sheet Pan Dinners Are Perfect for Weeknight Meals

Here are a few reasons I love sheet pan dinners for weeknight meals:

  • Easy meal on a tray (essentially a one-pot dinner) that most often requires no additional sides.
  • Delicious flavors mingle together on one pan.
  • Cleanup is a breeze with one sheet pan!
  • Perfect for leftover meat and produce you have on hand.
