If you are celebrating Easter, this week will be busy. Many families are on spring break, and others are just returning. But spring seems to be busy for everyone, whether you have school-age children or not! It’s one of the reasons I’ve kept this week’s menu quick and easy.

March One Pot Dinners in 30 Minutes Menu

Monday’s dinner is a quick and easy skillet dinner with whole grain pasta, fresh or frozen shrimp and all the lemon flavor we’re craving in March. Simple, bright, and delicious. Serve with a seasonal salad!

Tuesday’s dinner is packed with protein and is a classic chicken dish you are likely familiar with. This recipe, though, is made incredibly easy in a skillet. Lemon and kale complete this delicious weeknight meal.

Wednesday’s dinner is a one-pot dish with spring vegetables like asparagus, artichokes, and mushrooms. It’s protein-rich with ground turkey and delicious with a delightful lemon creamy sauce that’s incredibly yummy. Serve with a salad and a side of whole-grain bread if needed.

Thursday’s dinner is a quick and easy chicken casserole recipe made in a skillet in 30 minutes. Packed with good-for-you ingredients like broccoli and red pepper. It’s also a great meal to make with leftover chicken or rotisserie chicken.

Friday’s dinner is an easy but beautiful classic French dish with delicious flavors. It’s a one pot recipe that’s a bit different than the others this week. The “pot” is actually a parchment packet. Hence its name, “en papillote,” a French term meaning “enveloped in the paper.” Serve with a beautiful salad for Good Friday.

The Treat is a traditional recipe historically made on Good Friday.
