This Week

It’s a Big Game kind of weekend, which means delicious Super Bowl foods that may or may not be healthy! But that’s okay because we’re getting back on track with easy and delicious one pot meals next week!

Let’s look at this week’s dinner menu!

February 30 Minute Skillet Dinners Menu

Monday’s dinner is a quick and easy vegetarian Asian-inspired meal with simple and healthy ingredients. Feel free to add any protein to this speedy skillet dish, like chicken, beef, or pork!

Tuesday’s dinner is a Southwest-flavored skillet dish with all our favorite ingredients, like zucchini, corn, and black beans! Add taco shells if you wish, and definitely a green salad.

Wednesday’s dinner features a healthier, creamy Tuscan Chicken with spinach. It’s simple and quick and oh-so-delicious with Mediterranean flavors, all in 30 minutes. Add a green salad and perhaps another veggie (roasted, steamed, or pan-seared) on the side.

Thursday’s dinner is a boldly flavored barbecue glazed seafood dish with orzo and veggies. It’s putting me in the mood for cajun spices and nearly spring meals. It’s an all-in-one meal, but adding a salad would be nice, too.

Friday’s dinner is an end-of-the-week family favorite skillet meal. Use your favorite ground meat and whole grain buns for a quick weeknight meal. Add a side vegetable your family loves, and we’re on to a great weekend!
