You have to love February for all the food celebrations we get to enjoy. This week, we’re looking at Super Bowl Sunday, which, for me, is ALL about the food and the beginning of Lunar New Year celebrations with the most delicious food on the planet.
It will be a delicious week, with our weekend 30-minute dinners and the weekend’s festive dishes.

February Healthy 30 Minute Dinners Menu
Monday’s dinner is a hearty vegetarian stew ready in 30 minutes and bursting with February (winter) flavors. Add whole grain bread and winter salad to finish the meal.
Tuesday’s dinner is a skillet pasta dish filled with delicious vegetables and cooked chicken. This is a perfect recipe for leftover chicken you may have on hand from the weekend, or you can use a rotisserie chicken. Add a big salad, and dinner is done!
Wednesday’s dinner is a simple Mediterranean stir-fry that makes its own sauce. You can use ground beef or your favorite ground meat in this dish. Serve over your favorite grain.
Thursday’s dinner is a quick, simple, and delicious salmon dish made in minutes in the air fryer or baked in the oven. Add a green salad and roasted vegetables to round out the meal. If you’re using an air fryer, roast the veggies at the same as the salmon!
Friday’s dinner is an Asian-inspired quick and easy one-pot dinner. It is filled with delicious flavors and made with simple ingredients. Add a salad, and maybe make a batch of Chinese Almond Cookies for the weekend!
