Weeknight Dinner Meal Plan: It’s mid-February and there’s a lot to celebrate. This week we’re planning February Healthy Dinners to observe both Mardi Gras, Shrove Tuesday, and the beginning of Lent.
Celebrating Valentine’s Day over the weekend, there were treats aplenty! But chocolate is healthy, right? That’s what I told myself all weekend.
And right on it’s heels, the celebrations continue into this week as we celebrate Mardi Gras or Shrove Tuesday, and the beginning of the Lent season on Ash Wednesday.
Hopefully, there are plenty of weeknight dinner options, no matter how you celebrate!
February Healthy Dinners Dinner Plan
On Monday, we’re planning a Vegetarian Spring Egg Casserole, because while it’s been snowing all weekend in my neck of the woods, spring is just around the corner. This dish is a Mediterranean Diet classic.
For Tuesday, I’ve jotted down two options. And honestly, I will be making both. Shrove Tuesday Pancakes (you can read about its history in the post) in the morning. And Instant Pot Jambalaya for dinner. That’s one I get requests for all year long. It’s SO good.
While many fast on Ash Wednesday if they’re observing Lent, I’m planning an Italian Penne with Tuna pasta. I’ll serve it with a mixed greens salad.
With snowflakes fluttering all weekend, I’m still craving soup. But my favorite cabbage soup spans both winter and spring… with makes it perfect for mid-February.
For Friday, we’re making a Sheet Pan Greek Roasted Fish. Depending on what is most fresh at the market, I will probably make salmon.

Monday: Vegetarian Spring Egg Casserole

Irish Shrove Tuesday Pancakes with Lemon
Irish Shrove Tuesday Pancakes are a delicious way to celebrate Shrove Tuesday. These crepe-like pancakes are folded into quarters and sprinkled with fresh lemon juice and confectioners' sugar.
Tuesday: Easy Instant Pot Jambalaya
We're celebrating Mardi Gras and traveling to Cajun country with this amazingly delicious Instant Pot Jambalaya. It's truly one of my favorite Instant Pot rice dishes. The flavors transport you to Louisiana and it's hearty enough to fill up your people. Serve with a mixed green salad, slices of crusty bread, and for a treat -- King Cake or Beignets.
Wednesday: Italian Penne with Tuna
Tonight is a quick pasta dish that's flavorful and colorful combining leeks, baby spinach, tuna, and sun-dried tomatoes--and it's ready in just 20 minutes!
Thursday: Easy Unstuffed Cabbage Roll Soup
This Unstuffed Cabbage Roll Soup is everything you love about cabbage rolls, without the work or time. It's an easy, quick-cooking soup filled with the cabbage roll flavors and ingredients we love. Comfort food at its best.
Friday: Greek Roasted Fish with Vegetables

Treat: Banana Bread Pudding

I can't let February go by without making at least 1 back of these simple but iconic peanut butter cookies!
