And as we look toward the Super Bowl next weekend, plus Valentine’s Day on it’s heels, there is plenty of opportunity to test some recipes for both. The treat this week is decidedly in the Valentine camp but the dinners can definitely serve both!
February Healthy One Pot Dinners Menu
Here’s what we have on the menu:
Monday’s dinner is one of my favorite soup recipes when the weather is chilly. While the soup if filling and hardy, you might want to serve with a side salad and crusty, whole grain bread.
Tuesday’s dinner marries flavors from two cultures and looks utterly divine. Healthy and made in one skillet it’s a simple dinner that will taste anything but simple. Serve over your favorite grain.
Wednesday’s dinner is another skillet dinner that’s an incredibly quick and easy chicken dinner you’ll love. With a handful of ingredients, dinner is done in a flash. Serve with greens on the side.
Thursday’s dinner makes me believe that spring is just around the corner. While the recipe is labeled “barbecue” it’s also made in one skillet and quick as can be. It’s beauty on a plate!
For Friday, it’s a one-pot takeout classic that can be as spicy or mild as you wish. Substitute your favorite olives and peppers to customize it to your liking. And the best part is… no takeout is needed for this Friday-perfect dinner. Serve with all your favorite Mexican food takeout condiments.

Wasabi Beef Fajitas
