From a weekend of celebrating Cinco de Mayo, perhaps Britain’s Coronation festivities, and looking toward Mother’s Day next weekend, it’s an eventful few days.
Let’s keep evening meals simple this week with healthy one pot dinners filled with seasonal ingredients.
May One Pot Dinners Menu
Monday’s dinner is a healthy meatless dinner filled with spinach, white beans, and roasted sweet potatoes.
Gastroenterologist Sarah Robbins, M.D. says, “Spinach is always my first choice as the best vegetable for gut health. Not only is it readily available in grocery stores, reasonably priced, versatile, and convenient, this leafy green is densely packed with fiber and other nutrients that support gut and overall health.”
Tuesday’s dinner is a multicooker Mexican favorite at our house. It’s a quick and easy one-pot dinner ready in minutes. Pack on healthy condiments like greens, tomatoes, and avocados!
Wednesday’s dinner is a take-out favorite made easily at home. With simple ingredients and prep, it’s perfect for midweek when craving your favorite Chinese restaurant food.
Thursday’s dinner is almost always seafood. Tonight’s dinner is about summer citrus flavors and quick sheet pan dinners. Packed with flavor, it’s a dinner to love!
Friday’s dinner is another sheet pan favorite and so versatile you can easily change it up and use vegetables you and your family are fond of. Serve with cooked couscous or quinoa to round out the meal.
Treats: It’s a one-pan week, and I couldn’t resist adding a muffin tin to the mix. I love this healthier treat, perhaps to have around when pesky sweet cravings crop up.
