And to be honest, it probably isn’t even 10 minutes… most of the time, I can make it in 5 minutes! And this lemon pie… is pretty special.

No Bake Lemon Pie Ingredients
The flavor of this lemon pie filling is similar to lemon curd or the filling of my lemon bars, but quicker and easier to make. Sweetened condensed milk lends this filling a sweet, soft, and creamy texture. And it’s utterly delicious!
The cream cheese acts as a stabilizer eliminating the need for adding egg yolks. And eliminating the need to bake this easy pie in the oven.
Along with cream cheese and sweetened condensed milk, you will also need lemon juice. Because this recipe calls for both lemon juice and zest, it’s delicious with fresh lemons. However, I’ve tested it both ways, using fresh lemons and bottled lemon juice, and honestly, both are delicious. I would miss the zest as it provides such amazing lemon flavor, though.
Homemade Graham Cracker Crust
While I’m using a 9-inch ready-made graham cracker crust for the ultimate convenience, you can also make your own with 3 simple ingredients.
Here’s what you need:
- 12 full sheets of graham crackers
- 2 tablespoons granulated sugar
- 6 tablespoons melted butter
To make the crust, preheat the oven to 350°F. Using a food processor is easiest, but you can also use ready-made graham cracker crumbs (about 1 1/2 cups), or crush them with a rolling pin in a large size plastic bag.
Stir the ingredients together until combined and sandy in texture. Transfer to an ungreased 9-inch pie dish and using your hand, pat the crumbs into the bottom of the dish and up the sides to compact the ingredients. You don’t need to push with much force, simply pat the mixture into place.
Bake for about 10 minutes and let completely cool to room temperature before adding the lemon pie filling.
How to Make No Bake Lemon Pie
Easy step-by-step instructions are in the recipe card below, but here is a quick overview with photos:
Beat softened cream cheese in a large bowl until smooth. Stir in the sweetened condensed milk, lemon juice, and zest; and beat until smooth.
Transfer the filling to the graham crust, smooth the top with an offset spatula, and chill for 2 to 4 hours or until set. For very sharp slices, you might want to consider freezing the pie for half an hour or so.
Serve chilled.
Optional Garnishes
I love to use a star tip to pipe decorations on top. You can make your own homemade whipped cream or use whipped topping, like Cool Whip. Fresh lemon slices and zest are also a nice touch.
No Bake Lemon Pie Questions
Yes! The texture is a bit softer when using fat-free cream cheese. But the flavors remain very similar.
While I always love fresh lemon juice, bottled lemon juice works fine too. Eliminate the lemon zest in the recipe as well.
It’s best up to 2 days in advance but will last in the refrigerator for up to 5 days.
Absolutely! Wrap it well and freeze it for up to 3 months.

10 Minute No Bake Lemon Pie
Equipment
- 9-inch Pie Plate if making your own graham crust
Ingredients
- 1 9-inch graham cracker crust ready made or homemade
- 8 oz cream cheese at room temperature
- 14 oz can sweetened condensed milk
- 1/2 cup lemon juice
- 1 tablespoon lemon zest or the zest of 2 lemons
- dash of salt
Instructions
- Place the softened cream cheese into a bowl and blend with a hand mixer (or stand mixer) until smooth. Add the sweetened condensed milk, lemon juice and zest; continue blending until fully combined and completely smooth.
- Transfer the filling into the graham crust, smooth the top with an offset spatula and chill until set; about 2 to 4 hours. For crisp, sharp slices, you freeze the pie for 30 minutes or so just before serving.
- Top with whipped cream or cool whip and serve chilled.
