20 Minute May Dinners

Last week we focused on seasonal vegetables coming into the markets this month.

This week, we’re still focusing on those delicious, fresh vegetables. But we’re making healthy dinners in 20 minutes or less.

In fact, several of this week’s weeknight dinner recipes can be made in 15 minutes.

What will we do with all our extra time this week?

Hmm… dreams of the outdoors come to mind!

If you like 20-minute dinners, be sure to check out our Healthy 20 Minute Dinners post for more ideas.

But first, a quick reminder of what’s in season this month.

What to Cook in May

While the May season varies by region, there are some constants. These are the most common vegetables and fruit available across the country.

Here’s a regional guide for more specifics in your area.

  • Asparagus
  • Broccoli
  • Cabbage
  • Cauliflower
  • Bitter greens: Collards, kale, mustard, turnip
  • Leafy greens and lettuce
  • Radishes
  • Rhubarb
  • Spinach
  • Strawberries

All of our dinner recipes this week will feature the vegetables listed above.

It’s going to be a delicious, healthy, week of eating seasonally.
