Keeping it Healthy Dinners

Weekly Dinner Meal Plan: Jan 28 – Feb 1, 2019

As rains soaks the West Coast where I live, and snow blankets much of the rest of the country, this week’s dinners are all about easy, simple… and keeping it healthy.

There isn’t a market, store or coffee shop where I haven’t heard sniffles and coughs and winter malaise this week. My guess is it’s the same where you live.

So we’re warming up with these simple dinner ideas that are packed with veggies. From Sichuan Noodles to Mexican Sausage and Mediterranean Salmon to Wilted Bok Choy. And a lot in between.

Plus we’ve added a Healthy Whole30 sheet pan dinner. Even if you’re not into Whole30… it’s a dinner worth adding to your meal rotation.

Stay healthy, keep warm, and eat your veggies! Spring will be here before we know it!
