We’ve had a long history of breakfast cookies in my house. With a young picky eater — I quickly learned that “cookies” were the way to his heart.

And embarked on a journey to make these cookies as healthy as possible yet deliver that “cookie” appeal.
Over the years, they have morphed and changed with current likes and dislikes.

But the base breakfast cookie dough remains the same.
These Oatmeal Bran Breakfast Cookies are our current favorites. And have been baked, frozen, and sent off to college.
But keep in mind; they are not cookies. They are breakfast… and snacks… and even, yes, midnight snacks. And I don’t feel even a little guilty about snatching one at that 3:00 p.m. lull.
I’ve included some of our favorite add-in ideas, like raisins and pumpkin seeds. But use your imagination! I’d love to hear what you came up with.

Oatmeal Bran Breakfast Cookies with Coconut and Almonds
Equipment
Ingredients
- 1/4 cup butter
- 1/4 cup vegetable oil
- 1/2 cup brown sugar
- 2 large eggs
- 4 ounces unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 cup old-fashioned oats
- 1 cup bran flakes cereal
- 1/2 cup whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Add-In Ideas:
- 1/3 cup raisins
- 1/3 cup toasted pumpkin seeds
- 1/3 cup toasted and sliced almonds
- 3 tablespoons unsweetened shredded coconut
Instructions
- Preheat oven to 350 degrees F and line and baking sheet with parchment paper. Set aside.
- In the bowl of a stand mixer, combine butter, oil, and brown sugar and mix on high for about a minute, until the sugar has dissolved. Add eggs, applesauce, and vanilla; mix for an additional minute until the batter is light and fluffy.
- To the bowl add the oats, bran flakes, both flours, baking soda, cinnamon, and salt. Mix for 30 seconds until the flour is mixed in. The dough will be moist and sticky.
- Fold into the dough the desired add-ins listed above. Scoop 3-4 tablespoons of dough and mound on the prepared baking sheet. Flatten dough slightly with the back of a spoon. Bake 10 to 12 minutes or until lightly golden brown.

Trying these now. Mixture looks more like a thick batter than a dough. Added toasted coconut , pecans, almonds, chocolate chips & raisins. Used avocado instead of veg oil & almond flour instead of whole wheat ..Now to see how they bake up! Wish me luck!
the batter is really good uncooked
Wanted to use up a box of bran cereal so Found this recipe. It was easy to mix and bake. My add ins were 1/2 cup coconut, chopped walnuts and raisins. Came out very good. Not too sweet. Thanks for sharing.
