Great mornings begin with healthy, energy-sustaining breakfasts.
And when you add sweet, cinnamony apples to the mix, it just makes those busy mornings… or lazy Saturdays… or relaxed Sunday brunches all the better.
Low fat, energy boosting muffins with a good source of bran will keep you going long into your day.
1 cup flour
1 cup whole wheat flour
1 cup old fashioned oats
1/2 cup crushed bran cereal
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 apple, peeled and diced small
3/4 cup milk
1/4 cup canola oil
Preheat oven to 400-degrees. Prepare a 12-cup muffin tin with non-stick baking spray.
Combine flours, oats, crushed cereal, brown sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl. Fold in apples.
In a separate bowl, combine eggs, milk, and canola oil. Fold into the dry ingredients.
Portion muffins equally, using a scoop, into the muffin tins.
Sprinkle the top with a few oat flakes and a thin slice of apple if desired.
Bake for 20 minutes, or until golden and when a toothpick inserted in the middle comes out clean.
