Healthy Cinnamon Apple Bran Muffins
Equipment
Ingredients
- 1 cup flour
- 1 cup whole wheat flour
- 1 cup old fashioned oats
- 1/2 cup crushed bran cereal
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 apple peeled and diced small
- 2 eggs
- 3/4 cup milk
- 1/4 cup canola oil
Instructions
- Preheat oven to 400-degrees. Prepare a 12-cup muffin tin with non-stick baking spray.
- Combine flours, oats, crushed cereal, brown sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl. Fold in apples.
- In a separate bowl, combine eggs, milk, and canola oil. Fold into the dry ingredients.
- Portion muffins equally, using a scoop, into the muffin tins.
- Sprinkle the top with a few oat flakes and a thin slice of apple if desired.
- Bake for 20 minutes, or until golden and when a toothpick inserted in the middle comes out clean.
