Here’s what we’re cooking this week.
October 20 Minute Dinners
I mentioned the fall twist on everyone’s favorite classic mac and cheese. It’s on the menu for Monday, made in the Instant Pot, and ready in minutes. It’s one of my favorite fall quick and easy dinners.
For Tuesday, we’re making super easy Chicken Tacos, served with your favorite taco toppings.
And on Wednesday, we’re making a restaurant-quality dinner, but made in 20 minutes. Serve over pasta and with a green salad.
Thursday’s seafood choice is a healthy walnut and rosemary encrusted salmon with high reviews. Serve with a grain or roasted potatoes to round out the meal.
Lastly, we’re making a Friday favorite, enchilada skillet lasagne, that will have everyone coming to the table… without being asked twice!
The treat this week is a simple 3 ingredient cookie that’s so easy, I keep making them for the freezer.
