What is a Georgian Cheese Boat?
Also known as Khachapuri, a bread with Georgian origins, cheese boats are trending in restaurants all across the country. In fact, a Brooklyn, New York restaurant, aptly named “Cheeseboat,” has become a favorite stop on the east coast.
Here is their cheese boat.
But if you’re not in New York or simply want to make one at home, it’s incredibly easy—and fun! It’s perfect for appetizers and game-day treats, as is our Cheesy Garlic Pull-Apart Bread. It’s also perfect for cozy weekends with friends and family.
Cheese Boat Ingredients
This 3 ingredient cheese boat recipe is easy and fun to make. You will find ingredient measurements in the recipe card at the bottom of this post, but here is a list of what you will need:
- Pizza dough (store-bought or our homemade pizza dough)
- Shredded mozzarella and feta: I prefer low-moisture mozzarella cheese
- Eggs for an egg wash and an optional egg to top the cheese boat.
Note on dough: It’s best to make your own dough, but store-bought is also fine. I’ve even tried it with pizza dough in a can. It works, but because the dough is rectangular, you have to finagle it a bit to shape it into rounds and then into boat shapes. The taste, however, isn’t the same as using quality pizza dough, which is definitely preferred. Most markets carry quality pizza dough either in the freezer section or the deli section.
Note on Eggs: Cheese boats or khachapuris are traditionally made with a raw egg topping, which you stir into the hot cheese to cook. I’m not a fan of raw eggs, so often, I either eliminate them altogether or bake them in the oven. Directions are below.
How to Make a Cheese Boat
Step-by-step instructions are also in the recipe card below, but here is an overview:
Preheat the oven to 450°F and line a baking sheet with parchment paper.
Step 1: Shape dough
Cut the pizza dough into 4 equal pieces then shape each into 9-inch rounds. Roll the opposite sides toward the center and pinch the ends to form a boat shape. Transfer the shaped dough to the prepared baking sheet, top it with cheese, and brush an egg wash over the dough.

Step 2: Bake
Bake in the preheated 450° oven for 9-12 minutes, depending on their size. Garnish with fresh herbs (I love oregano) and Parmesan cheese. Serve immediately.

If you want to add an egg, make a well in the cheese filling, crack an egg into each well, return to the oven, and bake for an additional 5-6 minutes.

Cheese Boat Recipe
Ingredients
- 1 lb pizza dough store-bought or our Pizza Dough recipe
- 3 cups shredded low moisture mozzarella cheese 12 oz.
- 1 cup crumbled feta cheese 8 oz.
Egg Wash
- 1 egg plus one tsp water, whisked
Optional
- 4 eggs to bake into the cheese boat
Instructions
- Preheat the oven to 450°F and line a baking sheet with parchment paper.
- Cut the round of pizza dough into 4 equal pieces. Then spread the pieces of dough into about 9-inch rounds. Roll the two opposite sides toward the center and pinch the ends to form a boat shape. Transfer the shaped dough to the prepared baking sheet. Stuff each boat with the cheese mixture and brush an egg wash (1 egg + 1 tsp water) over the rolled edges of the dough.
- Bake for 9-12 minutes, depending on their size.
- If you want to add an egg, make a well in the cheese filling, crack an egg into each well and return to the oven and bake for an additional 5-6 minutes. Garnish with fresh herbs (I love oregano) and Parmesan cheese. Serve immediately.
