Zucchini Tots Ingredients

  • Grated zucchini
  • Large eggs
  • Diced onion, or green onions
  • Reduced fat grated cheddar cheese, or your favorite grated cheese
  • Italian seasoned dry breadcrumbs
  • salt and pepper to taste

How to Make Zucchini Tots

Step-by-step instructions are in the recipe card below, but here is a quick overview of how simple these are to make.

  1. Preheat oven to 400°. Grease a mini muffin tin with cooking spray.
  2. Grate zucchini and squeeze out any moisture.
  3. Combine ingredients in a bowl and season with salt and pepper.
  4. Fill muffin cups to the top and push down the filling to compact.
  5. Bake for 15-18 minutes.

Ingredients

  • 2 cups grated zucchini about 2 medium size zucchini
  • 2 large eggs
  • 1/3 cup onion diced small
  • 1/4 cup reduced fat cheddar cheese grated
  • 1/2 cup seasoned dry breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 400°. Grease a mini muffin tin with cooking spray.
  • Grate the zucchini into a clean dish towel. Wring all of the excess water out of the zucchini that you can (it won't be much, but every little bit counts).
  • In a medium bowl, combine the ingredients and season with salt and pepper.
  • Fill each muffin section to the top, pushing down on the filling with your spoon so it's nice and compacted (otherwise they'll fall apart more when you try to take them out of the tin).
  • Bake for 15-18 minutes in preheated oven. The top will be starting to golden. To easily remove from the pan, run a plastic knife around the edge of each tot.
