With two feet into the spring season, and flowers blooming everywhere, this week’s weeknight dinners will star spring’s best produce. All made quickly and easily on a sheet pan.

Here’s what we’re cooking this week:
Spring Sheet Pan Dinners
On Monday, we’re breakfasting for dinner with a simple Vegetable Hash topped with fried eggs… or poached if you prefer.
It’s been a while since our last Taco Tuesday, which we’re remedying this week. All with a spring twist on these incredible, fast Sheet Pan Shrimp Tacos.
Wednesday’s dinner is a favorite twist on Chicken Caprese roasted together with spring asparagus.
On Thursday, we’re roasting blackened salmon with potatoes and vegetables. Beautiful and delicious enough for company, but super simple for weeknight dinners.
Friday’s dinner is spring-inspired pizza with peas and prosciutto. While this will completely satisfy me… the guys in my house will be looking for more protein. I’ll be adding a charcuterie board for them, heavy on meats, salami, and fruits.
The treat this week is actually… breakfast. A favorite sheet pan pancake is transformed into spring with fresh strawberries.

It's a savory breakfast for dinner to begin the week. Super simple, easy, healthy ingredients and filled with protein!
Tuesday: Sheet Pan Shrimp Tacos
