Spring Sheet Pan Pizza with Asparagus, Leeks, and Bacon
Ingredients
Homemade pizza dough or 1-pound store-bought pizza dough, room temperature
4 slices bacon, cooked and crumbled
1/2 cup small-curt cottage cheese
2 cups shredded Mozzarella cheese or Gruyere cheese
1 bunch Asparagus, trimmed and sliced into 2-inch pieces, halved if they’re thick
1 small leek, white part only, washed and sliced thinly (1/4 cup)
Kosher salt, for sprinkling
1-pint grape tomatoes
2 cloves garlic cloves, minced
1/4 teaspoon dried oregano
1/4 – 1/2 teaspoon dried chili flakes (to taste)
1/2 cup freshly grated Parmesan cheese
Extra Virgin Olive Oil for drizzling
freshly ground black pepper
Directions
Preheat oven to 500 degrees.
Cook bacon, crumble, and set aside.
Slice the asparagus on the diagonal into 2-inch sizes pieces. Then slice the white part of the leek first in half lengthwise and then crosswise into small strips to equal about 1/4 – 1/3 cup. Finally, slice grape tomatoes in half lengthwise and toss into a bowl with minced garlic, leeks, and asparagus, drizzle with olive oil.
Drizzle olive oil on a large baking sheet and spread to coat thoroughly. Using 1 ball of homemade pizza dough or 1-pound store-bought dough, stretch into a large rectangle, pressing with fingers to finish forming. The dough will be very thin.
Lightly drizzle more olive oil on the dough, top with cottage cheese and spread. Sprinkle shredded cheese over the surface of the dough. Spread asparagus, leek, grape tomatoes, and garlic over the surface of the cheese. Top with Parmesan cheese and crumbled bacon. Season with salt and freshly ground black pepper to taste, dried oregano and chili flakes if using.
Bake 12 – 15 minutes, or until crust is golden brown and the cheese is bubbly. Remove from pan and slice with a pizza cutter. Serve immediately!
