Or, make Italian subs for a sandwich night. Add salad greens to make it a meal.
Wednesday: Bruschetta Chicken Breast Bake
Bake an extra chicken breast tonight for Friday's Pizza. This Bruschetta Chicken is easy (swap in canned tomatoes if you need to) and full of summer Mediterranean flavors. Add crusty bread and a summer salad.
Thursday: Almond-Crusted Trout With Swiss Chard (GF)
"Breading with almond flour gives a nice crispy texture to the fish without using a lot of oil. To expedite cleanup, the fish and greens are cooked in batches in one skillet so there's just one pan to clean." If you don't have almond flour, substitute all-purpose flour.
Friday: Grilled BBQ Chicken Pizza
A super easy summer Friday night dinner. Use the leftover chicken breast from Wednesday to get this pizza done quickly. I guarantee -- it won't last long! Add a salad and consider making a double batch!
Treat: Double Chocolate Zucchini Muffins
These Chocolate Zucchini Muffins are the perfect way to celebrate zucchini season. Rich and dense and chocolaty muffins are so delicious, you'll want to make a double batch!
