Ingredients You’ll Need
This Bruschetta Chicken Bake is made with pantry staples and fresh flavor boosters:
- Boneless, skinless chicken breasts – or use chicken thighs for a juicier option.
- Diced tomatoes with garlic, red onion, and Italian seasoning – a quick and easy bruschetta topping. Or use fresh cherry tomatoes, halved and seasoned to taste.
- Mozzarella cheese – shredded for even melting and that classic gooey finish.
- Balsamic glaze – for a tangy-sweet drizzle (store-bought or homemade).
Optional: Add chopped fresh basil, garlic, or even a sprinkle of Parmesan for extra flavor.
Choosing the Best Tomatoes
Tomatoes are the heart of bruschetta, so selecting the right kind makes a big difference in flavor and texture.
- Canned diced tomatoes work in a pinch—just be sure to drain them well. Look for seasoned versions with garlic, basil, and oregano to enhance the dish without extra prep.
- Roma tomatoes are best for this recipe. They’re firm, low in seeds, and won’t release too much liquid while baking.
- Cherry or grape tomatoes, halved, are a great seasonal alternative. They bring a touch of natural sweetness and a beautiful presentation.
Recipe Tips
Balsamic glaze, which is easy to find in most markets, is an essential flavor component in this Bruschetta Chicken Bake. While it’s an optional drizzle before serving, it adds a punch of incredibly delicious flavor. It’s a pantry staple that’s worth having.
That being said, for those with sulfite allergies, most vinegar made from grapes contains sulfites. A better choice for those with allergies would be a grain-based vinegar, like rice vinegar or cider vinegar, which are generally sulfite-free.

How to Make Your Own Balsamic Glaze
A balsamic glaze adds a tangy-sweet finishing touch to this chicken bake, and it’s surprisingly easy to make at home with just two ingredients.
Homemade Balsamic Glaze Recipe
While store-bought balsamic glaze is easy to use and works well, here is a simple way to make your own.
Ingredients:
- 1 cup balsamic vinegar
- 1/4 cup brown sugar
Instructions:
- In a small saucepan, combine balsamic vinegar and brown sugar.
- Bring to a gentle simmer over medium heat, stirring occasionally.
- Continue to simmer over medium to medium-low heat until the mixture reduces by half, about 10 minutes.
- Remove from the heat and let it cool. The glaze will continue to thicken as it cools.
Storage Tip: Store cooled balsamic glaze in an airtight container in the refrigerator for up to 3 weeks.
Thickness Tip: For a thicker glaze, simmer a few minutes longer until desired consistency is reached.
What to Serve with Bruschetta Chicken Bake
This flavorful dish pairs beautifully with fresh, seasonal sides. Here are some reader favorites:
- Easy Garden Pasta: A quick, colorful pasta with summer vegetables and fresh herbs. It’s light enough to complement the richness of the chicken.
- Instant Pot Risotto with Zucchini and Sweet Corn: Creamy, comforting, and full of seasonal flavor—an ideal match for this summery bake.
- A simple green salad with balsamic vinaigrette
- Crusty bread or garlic knots to soak up the juices
- Grilled corn on the cob is always a delicious and seasonal choice, or serve roasted seasonal vegetables like zucchini.
Frequently Asked Questions
Yes, boneless, skinless chicken thighs can be substituted for breasts. They may require a slightly shorter baking time—approximately 30 minutes at 375°F—until they reach an internal temperature of 165°F. Thighs offer a juicier texture and can add a richer flavor to the dish.
Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken in a baking dish, cover with foil, and warm in a 350°F oven for about 15 minutes or until heated through. Alternatively, microwave individual portions on medium power in 30-second intervals until warm.
Absolutely! You can assemble the chicken with the seasoning and bruschetta topping up to 24 hours in advance. Cover and refrigerate until ready to bake. For best results, allow the dish to sit at room temperature for about 15 minutes before baking to ensure even cooking.
Roma tomatoes are ideal—they’re meaty, low in seeds, and release less liquid during baking. Cherry or grape tomatoes (halved) also work well and add a slightly sweeter flavor. If you’re short on time, canned diced tomatoes (drained well) are convenient. Look for versions with garlic, basil, and oregano for extra flavor.

- 2 teaspoons minced garlic

Bruschetta:
- 4-5 Roma tomatoes finely chopped
- 1/2 red onion finely chopped
- 4 tablespoons fresh basil shredded
- 2 tablespoons olive oil
- salt to taste
Topping:
- Balsamic Glaze for drizzling for drizzling
- fresh basil leaves
- shredded mozzarella cheese
Instructions
- Preheat the oven to 375 degrees F.
- Chop the tomatoes into a small dice, about 1/4 to 1/2 inch and add to a medium size bowl. Next, chop the red onion and add it to the bowl. Toss with fresh basil and olive oil; season with salt to taste. Set aside.
- Season the chicken breasts with Italian seasoning, garlic, and salt. Place the seasoned chicken in the bottom of a baking dish and sprinkle with shredded mozzarella cheese.
- Next, layer the bruschetta over the mozzarella cheese. Bake for 35 to 45 minutes, or until the chicken breasts have reached a minimum temperature of 165℉. Drizzle the balsamic glaze over the chicken and serve.
Notes
- Tomatoes: Choose firm Roma tomatoes for easier chopping.
- Balsamic Glaze: You can find this in the condiment section of most grocery stores, but you can also make it yourself by combining about 1 cup of balsamic vinegar with 1/4 cup of brown sugar. Combine in a saucepan and bring to a simmer. Continue to simmer over medium to medium-low until reduced by half, about 10 minutes. Let it cool; it continues to thicken as it cools. If you want it thicker, simmer for a bit longer. It can be stored in the refrigerator for up to 3 weeks.

How long would you bake chicken thighs?
Hi Meghan! Boneless skinless chicken thighs should bake for about 30 minutes and reach an internal temperature of 165 degrees F.
Making this tonight for my family! Any sides you recommend that would go well with this dish?
Hi Meg! I love to serve it with sautéed greens. My family also loves it over mashed potatoes as the accumulated juices serve as a delicious gravy of sorts. But over rice or even a toasted chunky slice of bread is really good to.
For lower carb ideas, cauliflower rice is delicious too. Enjoy!
