Weekly Dinner Meal Plan: May 21 – 25:
As the month of May marches on, it seems we’ve been celebrating something all month.
And we’re not done!
The Memorial Day holiday begins this weekend. Yay for a 3-day weekend. I hope you have plans to spend time with family and friends. And also that you’ll do something meaningful for Memorial Day.

Before the festivities begin, there’s another week of dinner meal plans to schedule. Here’s what I’m cooking for dinner this week!

Monday: Creamy Ricotta Spaghettini with Arugula
Tuesday: Chicken Fajita Skillet Quinoa Bake
Wednesday: Soba Noodle and Shrimp Bake
Thursday: Sheet Pan Orange Chicken with Garlicky Green Beans
Friday: Philly Cheese Steak Sloppy Joes
Treat: Double Chocolate Chip Banana Bread
Monday: Creamy Ricotta Spaghettini with Arugula
A handful of ingredients with this 4-serving, 20-minute comfort food that seems perfect for a Monday. While arugula is called for in the recipe, kale or spinach is easily substituted. I’m serving with a loaf of store-bought French bread… or if I have time, my 1-Hour French Bread.
Tuesday: Chicken Fajita Skillet Quinoa Bake
It’s everything you love about fajitas, mixed with quinoa (or rice) in a skillet. A perfect and easy weeknight dinner. Especially a “Taco Tuesday!” Serve with chips, salsa, and homemade guacamole.
Wednesday: Soba Noodle and Shrimp Bake
The whole family will love this healthy one-bowl meal. Packed with veggies, and a little heat, it’s a 35-minute dinner that lightens and replaces takeout.
Thursday: Sheet Pan Orange Chicken with Garlicky Green Beans
I love weeknight meals made with sheet pans. I’m not sure if its the quick clean up or simply the one pan. But they always seem to work well for us. I’ve been craving Asian food this week — thus this simplified and easy version of a favorite takeout. Along with the green beans, I’m serving a steamed brown rice (or brown minute rice is time is short).
Friday: Philly Cheese Steak Sloppy Joes
It’s Friday!! And another takeout favorite. But healthier. I’m not sure what Friday night activities will bring, but I can be sure my guys will thank me for this one! I will also add Healthy Zucchini Wedges to the meal and call it good — well, great, actually!
Weekly Treat: Double Chocolate Chip Banana Bread with Espresso
As Memorial Day nears, we always have to have at least one chocolate type dessert along with our red, white, and blue berry treats. I’m baking this ahead for the whole weekend!
