Weekly Dinner Meal Plan: June 4 – 8
It’s kind of exciting to be fully into the first week of June. It’s like… summer is almost here.
And weeknight meals get easier as we march toward summer. I begin making lots of salads, quick and easy dinners and pack as many freshly harvested veggies as possible into our diet.
This week’s meals are easy, healthy and a bit lighter. Especially Thursday’s Guilt Free Chicken Parmesan.
As always, this is what I’m serving my family this week.

Monday: Apple Pecan Brussels Sprouts Salad
After a full weekend, the family needs a good dose of veggies. This crunchy salad is the perfect blend of flavor and texture, finished with a Lemon Poppy Seed Dressing.
Tuesday: Mexican Chicken Tacos
So versatile and easy, I try to keep this Mexican Chicken on a biweekly schedule. Serve with quick pickled onions, coleslaw, homemade guacamole and all your favorite taco toppings.
Wednesday: Grilled Rainbow Trout with Chimichurri
Over the weekend, I found some great prices on rainbow trout at my local Costco. One glimpse, and I knew it had to be on the menu this week. If the weather holds, we’ll grill outside; if not, I will adapt and either use a griddle or pan fry. Serve with cooked sliced potatoes and your favorite greens. I have an abundance of kale in the garden, so I’ll be sauteeing that.

Thursday: Guilt-Free Chicken Parmesan
With 4 simple ingredient and 271 calories per serving, this is an easy, healthy, and super delicious dinner! Serve with pasta (whole wheat is best but whatever your family likes), and steamed green beans.
Friday: Easy Bacon and Spinach Quiche
It’s breakfast for dinner! Plus, if by chance there were any leftovers… it’s perfect for a quick weekend brunch. Serve with a summer green salad.
Weekly Treat: Peanut Butter Cookies
Adapted from the Fanny Farmer Cookbook, the author says, “My mother used to make these cookies regularly when I was growing up, and they continue to be the standard to which I compare all other peanut butter cookies.”
