Weekly Dinner Meal Plan: September 17 – 21

A 5 night, Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss.

With the fall leaves beginning to emerge and the days becoming shorter, making time for exercise has been a priority for me. One which takes a bit more planning.

Yet still, when I can get out before dark, some long walks in the cooler air with some early fluttering leaves have been such a highlight!

As far as meal planning goes, we’ve been concentrating on quick cooking, 15 and 20 minutes dinners, for the past several weeks.

This week, I’m challenging myself to schedule and make entrees that are all around 300 calories.

And there are some yummy ones on tap.

Tuesday: Pan-Roasted Pork with Baby Vegetable Salad

A 20-minute, 295 calorie dinner with tender baby vegetables and herbs is Tuesday night perfect. To make quick work of the veggies, a mandolin or vegetable peeler is the tool of choice. While there are 5 veggies in this recipe — but you can easily pick 2 to 3 veggies for a quicker prep.


Wednesday: Tomato Pesto Tilapia in Parchment

Season 2 (4-ounce) tilapia fillets with salt and pepper. Pile a bunch of halved cherry tomatoes on top and dollop fillets with a big spoonful of pesto. Fold the parchment paper to create a snug packet and bake at 400°F for 15 to 20 minutes, until the fish flakes easily with a fork. Finish with more pesto to serve.
