We’re heading toward mid-October this week and I’m craving easy comfort food.
Like in — one pan comfort food.
We’ve had some spectacular fall weather this past week with a forecast for more. But the nights are chilly.
Which means we need hearty, filling, healthy dinners. From slow cooker soups to one pan chicken and salmon dinners. And on Friday — it’s an easy tailgating favorite!

Monday: Slow Cooker Cream of Potato Soup
This easy Slow Cooker Cream of Potato Soup is robust and hearty, thick with potatoes, a little butter, and savory with chopped bacon. And it’s ready when you walk in the door. Dinner made easy tonight. I’m adding a large salad and, of course, some crusty bread.

Tuesday: Chicken Tacos with all the Fixins
We serve this a lot — but it’s so versatile — easy — and delicious. A simple shredded Mexican chicken you can make 3 ways. We’re making tacos this week and adding all of our favorite fixins. For us — it’s a huge green salad with plenty of roasted corn and avocados. We’ll add Mexican rice — to fill the guys up. And always, guacamole.

Wednesday: Chicken and Broccoli Alfredo
“Quick-cooking boneless skinless chicken breasts are a key ingredient for those times when you need an easy dinner recipe. Make it a broccoli chicken dinner by adding some broccoli florets and tossing in a light Alfredo pasta sauce. A family-friendly dinner is served!”

Thursday: Spice Roasted Salmon with Cauliflower
“Moroccan spices usually blend the earthy (cumin) with the warm and fragrant (coriander and allspice). Salmon and cauliflower embrace these spices well. We start the cauliflower at a higher oven temperature to achieve better browning, then reduce the heat so the salmon cooks evenly and stays juicy. You could also sear the salmon on the stove while the cauliflower roasts: Cook in a skillet over medium for about 4 minutes on each side or until done.”
Friday: Turkey Swiss Cheese Melt Sliders
It’s Friday night football and I’m in the mood for tailgating and game day food — these easy, one pan turkey sliders are filled with melty Swiss cheese and cabbage. Easy and delicious. It’s Friday night food at its best!
