20 Minute Healthy Spring Dinners
Monday’s dinner is a quick quinoa stir fry that’s packed with healthy nutrients, is meatless, and perfect for spring. Dinner is healthy and done in minutes!
Taco Tuesday is transformed, this week, into a delicious and easy 20 Minute Fish Taco dinner you’ll love. Add greens and guacamole!
For Wednesday, we’re making a super simple Beef Pad Thai recipe that also happens to be healthy. Again, spring greens for a side.
Thursdays are always seafood night and this week is no exception. This simple 20-minute shrimp pasta is a quick and delicious favorite for spring.
On Friday, we’re heading south of the border for a delicious soup you can make in the Instant Pot or stovetop. It’s healthy, perfect for spring, or honestly any time of the year. I’m adding Cast Iron Skillet Cornbread and greens.
The treat tastes like spring with lemons and blueberries, perfect for snacks, tea, or for breakfast.

Tuesday: 20 Minute Fish Tacos
"Quick & Easy Fish Tacos Recipe! Fried white fish (cod or tilapia) served in flour tortillas and topped with homemade cabbage slaw, a chipotle Ranch sauce and topped with avocado, cheese and tomatoes. Perfect 20-minute dinner."
Wednesday: Beef Pad Thai
"We've bulked up the serving size of beef pad thai by adding in lots of healthy veggies like matchstick carrots, snap peas and scallions. Look for whole-grain brown-rice pad thai noodles to add an additional 3 grams fiber to each serving."
