30 Minute One Pot Dinners: Delicious and simple meals, done in minutes, and all in one pot, all week. From chili to pasta, skillet pork chops, and even a 6-minute seafood dinner. It’s a simple and delicious menu this week.
This week’s One Pot Dinners focus not only on getting dinner on the table in 30 minutes or less, they also contain healthy ingredients that help you keep your healthy eating goals intact. Some could even be called anti-inflammatory recipes.
Jessica Ball, RD, writes for Eating Well Magazine, “Inflammation can be the sneaky culprit behind a number of health problems, from sleeping poorly to struggling to lose weight.” Focus on ingredients like colorful vegetables, beans, whole grains, and eggs to help keep chronic inflammation in check.

30 Minute One Pot Dinners
It’s chili season, and Monday’s vegetarian version is ready in 30 minutes or less. While it’s made with pumpkin, it’s easy to swap for butternut squash, which may be easier to find. You might want to add a one-pot skillet cornbread to round out the meal.
On Tuesday, we’re cooking dinner in about 10 minutes with a simple skillet pork chop recipe we’ve loved for years. If you choose thicker chops, it may take a bit longer to cook. Add greens and perhaps some roasted vegetables as well.
Wednesday’s skillet chicken dish is perfect for February. Healthy, anti-inflammatory, with a hint of spring to come.
For our weekly seafood, we’re broiling cod in 6 minutes. Amazing! I’m so looking forward to Thursday!
For Friday, it’s a family classic, super easy Spinach Chicken Pasta. Add slices of Italian style bread (or make your own Italian Bread in an hour) and in minutes, dinner is done and Friday fun can begin!
