400 Calorie Dinners
Didn’t you love the holidays?! I have zero regrets for the amazing and indulgent food we baked, cooked, and prepared all season.
But now that the calendar page has turned and it’s a new year, some say a new decade, I’m excited to get back to healthy, well-balanced weeknight dinners.
This week, we’re jumpstarting 2021 with these 400 calorie dinners. And many dinners are under that 400 calorie mark.
We’re combining flavors and even trying some new, delicious foods.
Like Friday. We’ll just jump to the best day of the week. Friday is a Korean BBQ Pizza that’s super simple to make and packed with amazing flavor. It’s a no-guilt dinner for 350 calories.
On Monday, we’re making Steak, Pepper, and Sugar Snap Stir Fry. I’m serving the stir fry over cauliflower rice, but swap in your favorite grain. Check the calories, though, if you want to stay within the 400 calories mark.
Tuesday is a favorite Mexican Bean Soup with, of course, guacamole. I’m hiding the tortilla chips that night.
When I was young, one of my favorite Chinese restaurant dishes was Egg Foo Young. On Wednesday, we’re making Egg Foo Young… with a twist. I’m super excited about this one!
Thursday, we’re heading back to seafood Thursdays with a 15-minute dinner and always a favorite. Salmon patties will be served over fresh greens. I’m holding the bun for my meal, but honestly, the guys will probably have their salmon on a whole wheat bun.
The “treat” this week is a healthy, Peanut Butter Banana Smoothie. It’s sweet and super delicious!

Tuesday: Mexican bean soup with guacamole
Serving dinners under 400 calories does mean they can't be winter hearty too! "This warming, spiced vegetarian soup packs in goodness and is filling too. The quick-to-assemble guacamole topping tastes as good as it looks."
Wednesday: Egg Foo Young With Mushroom Sauce
"Think of egg foo young as a cross between an American-style omelet and a crispy Chinese pancake, loaded with vegetables and topped with a savory mushroom 'gravy.' It’s a super-speedy meal!"
Thursday: Salmon Burgers in 15 Minutes or Less
Crispy Salmon Burgers, yes, in 15 minutes or less. How does that sound? Made easy with mostly pantry ingredients you may already have on hand. I'm serving mine without a bun and over greens, but the guys will have a whole wheat bun and honestly, probably 2 patties each.
Friday: Korean Barbecue Pizza
"We gave a crowd-pleasing classic like barbecue chicken pizza a Korean spin. Fresh mozzarella is mild enough to complement the caramel and chile notes in the sauce and is a great canvas for the fresh carrot and radish salad on top."
Treat: Peanut Butter Banana Smoothie
