Loving 5 Minute Lunches!
Lunches should be savored and enjoyed and somewhat healthy to boost your energy throughout the day.
That’s the plan, anyway.
Too often, I’m nibbling on the go, sitting in front of the keyboard, or too busy cooking to enjoy this mid-day meal. Because, of course, teatime is only a couple of hours away!
But this tuna salad makes me change my tune! It’s incredibly delicious with fresh dill and brightened with lemon. All on top of crunchy greens. So good that, for me, it’s irresistible.
I love to assemble the tuna salad the evening before or in the morning, ready the greens in advance… and enjoy a nourishing lunch in minutes!
Or, if grainy bread is calling my name… sandwich the greens and salad, and it’s ready for a heartier meal or convenient for on the go.
Tuna salad never tasted so good! Hope you, along with me, will take time to save the mid-day meal!

Ingredients for Tuna Salad
The ingredient measurements are in the recipe card at the bottom of this post, but here is a quick overview of what you will need:
- Canned tuna: like chunk light, solid, or chunk white (wild albacore).
- Fresh lemon juice (about 1/2 of a lemon)
- Mayonnaise: Kewpie mayonnaise is delicious, but use what you have on hand.
- Bagged salad greens: Lettuces like butter and romaine lettuces are particularly delicious with their flavor and texture, but spring mix greens are great too!
- Ranch dressing
- Radishes: I could only find red radishes in my market this week, but I love to use watermelon radishes or multi-colored radishes when available.
- Fresh herbs: I’m using dill in this recipe because it pairs so well with wild tuna but use your fresh fresh herbs like tarragon or chives.
