August Skillet Dinners: What to Cook (Aug 23)

We’re cooking August Skillet Dinners this week with healthy, delicious, and seasonal ingredients. And… all dinners take 30 minutes or less.
This week’s weeknight dinner recipes feature some of the best of August produce like peaches, tomatoes, and zucchini.
Of which… I can’t seem to get enough of, how about you?
Every morning my walk takes me by a beautiful community garden, which I love to gaze at and compare to my own home garden.
The tomatoes are finally ripening on our vines, peaches are showing up everywhere in the markets, and August and zucchini belong together.
And oh my, I wish I had planted giant sunflowers this year. The community garden has 20 or more of these beautiful August blooms that soar above my head. They’re like a ray of sunshine blooming in the garden.
But back to our dinner menu… Here’s what we’re cooking for dinner this week, I’ll dream of sunflowers later (happy smile).
August Skillet Dinners in 30 Minutes or Less
Monday’s dinner is an easy, new favorite at my house. It’s a pasta dish featuring zucchini, summer squash, and tomatoes.
For Tuesday were making a quinoa chicken bake loaded with healthy grains, lean chicken, and Southwest flavors.
Wednesday is a summer favorite. This simple pork chop dinner with balsamic glaze is served alongside peaches and I always add a green salad.
Thursday’s dinner is one to look forward to. If you love fish and chips, this is right up your alley. A skillet fish dinner that takes 5 minutes to cook.
For Friday, we’re making simple but delicious skillet enchiladas.
And keeping with that peaches theme, the treat is a skillet peach cobbler that I’ve been making since peaches began ripening this year.
