Christmas Week Dinners
I love Christmas week!
The pressure of the holidays is passed, the gifts have been wrapped and given, and the house is still decorated. Twinkling lights, fireside chats, hiking in the snow, and warm dinners with the family.
It’s what the week is all about in my book.
And while we’ve been cooking and baking and preparing, dinners still come every night this week.
Here are some deliciously simple ideas to serve with Christmas leftovers.
On Monday, we’ve scheduled an easy traybake dinner using leftovers from Christmas. Use what you have and modify for this simple dinner!
Tuesday is a quick version of a favorite 15 Minute Ham and Bean Soup, made easy in the Instant Pot.
Wednesday is a healthy version of lasagne using winter squash and spinach.
We’ll end the week with ideas for New Year’s Eve appetizers and finger foods and a classic, traditional New Year’s Day Black-Eyed Peas Soup.
The treat? I can’t imagine ringing in a new year without chocolate. This “chocolate” is an easy skillet cookie that seems especially appropriate this year!
