While summer is laid back and fun and easy — sometimes it takes a bit of planning to make it so. Schedules are free-flowing, flexible, tentative — as they should be. But I’ve found that with this “easy” schedule, I can often find myself in a fix for dinner with little time for prep and hungry eyes waiting for their next meal. That’s when you find yourself reaching for takeout menus.
There will always be takeout nights — but these recipes are quick-fix and healthy ideas that will feed your crew in no time.

1. Salmon Burgers
One of my favorite go-to dishes because it’s largely a pantry meal and if I didn’t get to the market, we’ll still have a healthy dinner in minutes.
2. Korean Style Kimchi Burgers
“Follow the recipe to make your own kimchi, or take a shortcut and use the condiment ready-made from the store. Pair the burgers with a beer with balanced malt and hops like Saigon Export.”
3. Chicken and Summer Vegetable Tostada
A south-of-the-border supper is ready in a snap thanks to quick-cooking chicken tenders. The tostadas can easily become soft tacos if you skip broiling the tortillas. Serve with black beans.
4. Fresh Corn Cakes with Summer Salsa
