Weeknight Dinner Meal Plan: We’re making Healthy Winter Comfort Food this week. Filled with flavor, these comfort food recipes are January friendly, healthy and delicious!
January has made itself known in my neck of the woods this week. Wind storms and rain have pounded the windows and surged our rivers and lakes.
But in these blustery, cloud strewn days of storms, followed by moments of sun breaks, I’m reminded of how beautiful winter can be.
I’m also reminded that I love cozy winter socks (thanks Mom — I found an Amazon delivered package at my front door with these wool socks. They are wonderful!).
There couldn’t be a more appropriate month to make favorite comfort food dinners. Same great flavor, just a little healthier.
Here’s what we’re making this week!
Healthy Winter Comfort Food
Grilled Cheese and Tomato Soup is always a comfort food favorite. This reimagined Grilled Cauliflower Sandwich with Sun-Dried Tomatoes brings additional flavor and is yummy. I’m also making an Instant Pot Tomato Soup to go with it.
For Tuesday, these Beans and Greens Enchiladas are calling my name. I will add a protein, either chicken or pork, to the enchiladas.
On Wednesday, we’re making a Middle Eastern Lamb Stew that makes my mouth water. Simply delicious and a huge pick-me-up for mid-week!
Those of you who follow these menus know I always schedule seafood on Thursdays. Are you a fan of fish and chips? This Healthy Fish and Chips is a dinner my whole family is looking forward to!
Fridays seem perfect for pizza night… and a movie… but most likely something sports-related. This recipe is easy and an interesting twist on traditional pizza.
The treat this week– isn’t really healthy. But it IS comfort personified. Warm and creamy and custardy. It’s the “icing on the cake,” for a week of comfort food.

Monday: Cauliflower Grilled Cheese with Sun-Dried Tomatoes
"A jar of sun-dried tomatoes does double duty in this healthy sandwich recipe--the oil coats roasted cauliflower florets with flavor, while the chopped bits of tomato add color and bursts of umami." Since it's "comfort food week," I'm serving with this easy Instant Pot Tomato Soup.
Tuesday: Beans & Greens Enchiladas
"Any type of canned bean will work in these easy layered enchiladas, but our favorite combination is a mix of black and pinto beans. Serve as a vegetarian main dish or as a tasty side for roasted pork or chicken."
Thursday: Fish and Chips {Healthy Baked Recipe!}

Friday: Easy Teriyaki Chicken Pizza
