As the season kicks into gear this month, we’re keeping dinners simple and healthy so you can get done what you need to, and still serve healthy dinners.
Here’s what we’ve planned for the dinner menu.
Easy Healthy December Dinners Menu
Monday’s dinner is a classic skillet Asian-inspired takeout favorite you can easily make at home… in 15 minutes. The best kind of dinner for hectic Mondays!
On Tuesday, we’re hinting at Taco Tuesdays with a plant-forward healthy enchilada recipe featuring butternut squash. I’m still craving this delicious winter veggie!
Wednesday’s dinner is a quick and easy pressure cooker chicken and rice dish with lots of vegetables like broccoli and cherry tomatoes. Simple and perfect for busy weeknights.
Do you love casseroles? I do too, although it’s been a while at my house. On Thursday, we’re making a healthy and quick Salmon Noodle Casserole that will make awesome lunches and leftovers!
For Friday, it’s all about a healthy, classic slow cooker stew. And speaking of leftovers… this will make for easy weekend eating too!
The treat is Christmassy and fun!
