What is Tuscan Chicken?

Tuscan Chicken is a creamy skillet chicken recipe made with seared chicken, tomatoes, spinach, garlic, Italian herbs, and a rich, savory sauce. It has flavors similar to popular restaurant-style Tuscan chicken dishes, but it's easy to make at home in one skillet.

While this recipe isn't a traditional Tuscan dish, it is inspired by Italian-style ingredients and creamy Florentine-style sauces made with garlic, Parmesan, cream, and spinach.

This version keeps things simple with thin-cut chicken breasts, cherry tomatoes, baby spinach, Italian seasoning, and a creamy sauce made with coconut milk or cream. The crispy prosciutto adds a salty, savory finish that makes the whole skillet especially delicious.

Ingredients You'll Need

Specific ingredient measurements are in the recipe card below, but here are a few notes on what you'll need.

  • Chicken: Thin-cut boneless, skinless chicken breasts cook quickly and evenly in the skillet. Chicken tenders can also work well.
  • Prosciutto: Crisps quickly in the skillet and adds salty, savory flavor. You can also use pancetta or bacon.
  • Italian seasoning: A simple way to add herb flavor to the chicken and sauce.
  • Garlic, tomatoes, and spinach: Fresh garlic flavors the sauce, cherry tomatoes soften and burst in the skillet, and baby spinach wilts quickly at the end.
  • Creamy sauce: Use coconut milk for a dairy-free option, or cream or half-and-half for a more classic creamy sauce. Dijon mustard and lemon juice add brightness and balance.
  • For serving: Parmesan cheese, fresh herbs, and lemon wedges are all delicious finishing touches.

How to Make Creamy Tuscan Chicken

Here's how to make this oh-so-simple skillet Tuscan chicken. Detailed instructions are on the card below, but here is a brief overview:

Four seasoned Tuscan Chicken breasts are cooking in a black skillet, placed on a wooden board with a cloth napkin and a bowl of greens nearby.
  1. Season the chicken with Italian seasoning, salt, and pepper. Heat olive oil in a large skillet, then cook the prosciutto until crisp. Remove and set aside.
  2. In the same skillet, sear the chicken on both sides until golden and cooked through. Transfer to a plate.
  3. Add garlic, cherry tomatoes, and additional seasoning to the skillet. Cook until the tomatoes soften and begin to burst.
  4. Stir in the coconut milk or cream, Dijon mustard, lemon juice, Parmesan if using, and spinach. Simmer briefly until creamy and the spinach has wilted.
  5. Return the chicken to the skillet and top with crispy prosciutto and fresh herbs before serving.
